Caramelised Garlic Chilli Oil

Ingredients

  • 500 ml Extra Virgin Olive Oil
  • 8 Bulbs Garlic
  • 3 Chipotle Chillies
  • 1 tbsp Chipotles en Abodo
  • 2 Sprigs Thymes
  • 3 Teaspoons Salt

Instructions

  • Pour the extra virgin olive oil, Chipotles en Abodo, thyme and a seasoning of salt into a heavy bottomed pan. Chop the garlic into small chunks and the chipotle chillies in half and place into the pan. Heat the pan slowly on a low heat until the oil start to simmer gently. Leave the oil for 30 minutes to simmer.
  • After 30 minutes take the pan off the heat and let the oil cool down to room temperature. When the oil is at room temperature, transfer to a sterilised jar and enjoy!
