I know first hand how frustrating it can be trying to recreate food you have just bought from your favourite take out, just to find its missing that special ingredient. That being said, let’s get into today’s recipe: Pizza Sauce
Our pizza sauce is very simple, it is not cooked, just a few simple ingredients mixed together! For our sauce we use tomatoes, garlic, basil, extra virgin olive oil and salt. The secret is to use a brand of tomatoes that are naturally sweet, and some extra virgin olive oil that complements the natural flavour of a pizza.
Many people will tell you that you can only make authentic Neapolitan pizza from San Marzano tomatoes, as they are famed for their naturally sweet flavour. However, after sampling many brands of tomatoes I found the most consistently sweet and fresh tomatoes were Cirio Pelati Tomatoes. These are widely available and fairly cheap so a win win for the average home pizzaiolo.
The ingredient that gives our pizza its most unique flavour is the extra virgin olive oil. We use Garcia De La Cruz Olive Oil, which provides an extremely clean, slightly fruity flavour that sets our pizzas apart. This olive oil is fairly expensive however so feel free to substitute in one you like or have at home!

Pizza Sauce
Ingredients
- grams Whole Tomatoes
- grams Extra Virgin Olive Oil
- grams Basil
- grams Garlic
- grams Fine Sea Salt
Instructions
- Decant whole tomatoes into a bowl and combine with the other ingredient. Use an immersion blender to mince and shred the garlic and basil. Make sure not to over blend the tomatoes, you are looking for a slightly chunky sauce, not a complexity smooth consistency.
- Make sure all ingredients are thoroughly incorporated and cover. Place the sauce into the fridge and allow the ingredients to marinate together for at least 1 hour.
