The use of this Garlic Chilli Oil in any dish is sure to bring your flavours to the next level!
To make this Sweet Caramelised Garlic Chilli Oil you only need 6 ingredients, garlic, chipotle chillies, chipotles en abodo, fresh thyme, salt and some extra virgin olive oil. This oil provides a predominantly Mexican flavour so works great in any Mexican dishes, however the oil is also great on toast, in pasta sauces and nearly all things you want to give a little kick to!
I make this oil around four times a year and doing it all in one go saves me from having to chop up garlic and chilli for every individual meal! Its a real time saver in the kitchen!
Three Things You Need To Get Right
- Simmering the Oil – When simmering your oil for 30 minutes it is important not to have the temperature too high! Having the oil bubbling at too high a heat will cause the garlic to burn instead of caramelising. Burnt garlic will cause the oil to become bitter, whereas we are looking to make the oil to taste sweet through caramelisation.
- Size of the Garlic – The size you chop your garlic to is important! Too small chunks of garlic will burn in the oil, whereas too big chunks will take longer to caramelise. To cook the oil within the suggested 30 minute time frame, aim to chop the garlic into the sizes shown in the photo below.
- Use a Heavy Bottomed Pan – Using a heavy bottomed pan will help reduce the likelihood of the garlic sticking and burning at the bottom of the pan. This is because heavy bottomed pans are better at distributing heat evenly and not creating “hot spots” where your garlic may stick and burn. As stated before burnt garlic will cause the oil to become bitter, so it is imperative you do everything to prevent this!

- How long can I store this oil for? – This oil has a shelf life of 3 months. So, if you make it a few times a year you will have some garlic chilli oil all year round!
- Can I use different chillies? – You certainly can use different chillies! Chipotle chillies are used in this recipe to provide a flavour great for Mexican dishes. You could however, use Calabrian chillies for example, to create an oil great for Italian dishes!
- How hot is this oil? – The oil provides a medium level of heat so is great for adding to a number of diffrent dishes. It also tends to marinate and become more flavourful and spicy the longer it remains in the jar for.

- Garlic
- Chipotle Chillies

Method
- Pour the extra virgin olive oil, Chipotles en Abodo, thyme and a seasoning of salt into a heavy bottomed pan. Chop the garlic into small chunks and the chipotle chillies in half and place into the pan. Heat the pan slowly on a low heat until the oil start to simmer gently. Leave the oil for 30 minutes to simmer.
- After 30 minutes take the pan off the heat and let the oil cool down to room temperature. When the oil is at room temperature, transfer to a sterilised jar and enjoy!
Caramelised Garlic Chilli Oil
Ingredients
- 500 ml Extra Virgin Olive Oil
- 8 Bulbs Garlic
- 3 Chipotle Chillies
- 1 tbsp Chipotles en Abodo
- 2 Sprigs Thymes
- 3 Teaspoons Salt
Instructions
